You're right, I should have made lima beans. I just do not like spinach. I take that back, I love spinach salad, spinach dip and that kind of thing, but I had frozen spinach and I put vinegar in it (that's how Doug likes it) and it was gross!
Dinner tonight is probably going to be PB&J. :) Working late.
The meatloaf was good. I subbed ground beef for turkey-last couple times we've had ground turkey it's tasted weird, so we haven't used it for awhile. 1/2 packet onion soup mix for the onions, since Doug doesn't like them. I add a couple dashes of Worcestershire sauce and a little bit of grated parm. cheese (yes, the stuff in the green canister.)

I'm the same as you. Spinach is good as long as it fresh and isn't cooked.
How was the meatloaf? You said you make substitutions to the recipe? What kind?
