So, last night I was all set to make fish tacos, except the cod was still frozen when I got home. For that matter, the chicken I had laid out for the chicken enchilada chili was still frozen, too.
So I improvised and made tacos with the beef I had laid out for the raspberry beef. I'm thinking it will have to be raspberry chicken, now.
I also made this recipe for rice and beans, which ended up being way too much food, but was good and we had plenty left for lunches today.
Tonight:
Broiled Fish with Lemon & Pepper
Roasted Potatoes with Dill Butter
Green Salad

Hey, there's always those nights...I have no idea what we're having tonight, because I didn't get anything out. Also, I meant to tell you that the lady on the crockpot blog is always putting in frozen meat.
Nevermind, we're having cranberry pork roast tonight. I put a 3 lb. hunk of frozen solid pork in my crockpot. I'll let you know how that goes.
I don't know how people do the frozen meat thing...I can never get the paper off the bottom when it's frozen.
